Preheat the oven to 200°C (392°F).
Cook the filling: In a skillet, fry the bacon until slightly crispy. Add the diced potatoes and cook until tender. Add onions and sausages; sauté until the onions are soft and golden. Season with salt and pepper. Remove from heat and let cool slightly.
Prepare the pastry: Roll out the puff pastry sheets and cut them into squares or rectangles.
Fill and fold: Place a spoonful of the filling in the center of each pastry square. Top with shredded cheddar cheese. Fold over to form triangles or rectangles and seal the edges with a fork.
Brush with egg wash (optional) for a glossy finish.
Bake for 20–25 minutes or until golden brown and crispy.
