Cook the Chicken:
Season chicken with olive oil, oregano, garlic powder, salt, and pepper. Grill or pan-sear for 6–7 minutes per side, or until cooked through. Let rest, then slice or shred.
Make the Tzatziki Dressing:
Combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well and chill for 10 minutes.
Assemble the Salad:
In a large bowl, combine the tomatoes, cucumber, red onion, olives, and chicken. Drizzle the tzatziki dressing over and toss gently.
Top with feta (optional) and serve chilled.
