Tartlets with Homemade Crème Brûlée Filling

Step 1: Make the tartlet shells

In a bowl, mix flour and sugar. Add cold butter and rub into flour until it resembles breadcrumbs.

Mix in egg yolk and cold water until dough forms.

Chill dough for 30 minutes, then roll and cut to fit tartlet molds.

Blind bake at 180°C (350°F) for 15–18 minutes. Let cool.

Step 2: Prepare the crème brûlée filling

Heat cream with vanilla until warm (do not boil).

In a bowl, whisk egg yolks and sugar. Slowly pour in warm cream while stirring.

Strain mixture and pour into cooled tart shells.

Step 3: Bake and finish

Bake filled tartlets at 150°C (300°F) for 25–30 minutes, until just set.

Chill completely.

Before serving, sprinkle brown sugar on top and caramelize under a hot grill or with a kitchen torch.
