Preheat Oven: Preheat the oven to 350°F (175°C). Grease and flour an 8 or 9-inch round cake pan.
Prepare Plums: Toss the sliced plums with lemon juice. Set aside.
Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
Cream Butter and Sugar: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in vanilla extract.
Combine Wet and Dry: Gradually mix the dry ingredients into the butter mixture, alternating with the milk. Begin and end with dry ingredients. Mix until just combined—do not overmix.
Assemble Cake: Pour the batter into the prepared cake pan and spread evenly. Arrange the plum slices over the top, slightly pressing them into the batter.
Sprinkle Sugar: Sprinkle 1 tbsp of granulated sugar over the top.
Bake: Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve: Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
