Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the cubed potatoes and season with salt and pepper. Cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
Add the remaining olive oil to the skillet and increase heat to high. Season the steaks with salt and pepper.
Sear the steaks for 3–4 minutes on each side, depending on thickness and preferred doneness.
Reduce heat to medium, add butter and minced garlic. Spoon the garlic butter over the steaks as they finish cooking.
Return the potatoes to the skillet and toss in the garlic butter.
Sprinkle with chopped parsley before serving.
