Prepare the Pineapple Skin:
Start by washing the pineapple thoroughly. Peel the pineapple, removing any outer skin and the eyes (small spots on the peel). Set the fruit aside to use for another recipe.
Boil the Skin:
In a large pot, add the pineapple peel, cinnamon stick, cloves, and ginger slices to the water. Bring it to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
Strain and Sweeten:
After the simmering process, strain the liquid into a jug to remove the solids. You can add honey at this stage for a touch of sweetness if you like.
Add Lime and Chill:
Once the liquid has cooled down a little, squeeze in the juice of 1 lime for a refreshing zest. Chill the juice in the refrigerator for at least an hour before serving.
Serve:
Serve the juice over ice cubes for an extra refreshing experience. You can also garnish with a slice of lime or a cinnamon stick if desired.
