Mac and Cheese Meatloaf Casserole: The Ultimate Comfort Bake

Preheat oven to 180°C (350°F).

Prepare meatloaf mixture: In a large bowl, combine ground beef, crushed crackers, onion soup mix, eggs, milk, and half the ketchup and BBQ sauce. Mix well until fully combined.

Spread in baking dish: Press the meat mixture evenly into a greased 9x13 inch (23x33 cm) baking dish.

Bake meatloaf base: Bake for 30 minutes uncovered.

Make cheese sauce: Meanwhile, cook macaroni until al dente. In a saucepan, melt butter, stir in flour, and cook for 1 minute. Gradually whisk in milk until thickened. Stir in shredded cheese until melted. Season with salt and pepper.

Assemble: After meatloaf bakes for 30 minutes, drain any grease if needed. Spread remaining ketchup and BBQ sauce mixture on top. Then, spread mac and cheese over the meatloaf evenly.

Final bake: Return to oven and bake for another 20–25 minutes until the top is golden and bubbling.

Cool and serve: Let rest for 10 minutes before slicing.
