Preheat your oven: Start by preheating your oven to 375°F (190°C).

Prepare the fish: Rinse the cleaned Branzino under cold water and pat dry with paper towels. Place the fish on a baking sheet lined with parchment paper.

Prepare the marinade: In a small bowl, combine the olive oil, minced garlic, zest from one lemon, salt, black pepper, and optional white wine. Mix well.

Season the fish: Rub the marinade generously over the fish, making sure to coat both sides and inside the cavity. Slice the second lemon into thin rounds and place them inside the cavity of each fish. You can also place a sprig of thyme or rosemary inside for extra flavor.

Bake the fish: Place the prepared fish in the preheated oven and bake for 20-25 minutes, or until the fish is fully cooked and flakes easily with a fork. If you want a crispier skin, you can broil the fish for the last 2-3 minutes.

Garnish and serve: Once baked, remove the fish from the oven and transfer to serving plates. Garnish with freshly chopped parsley and extra lemon slices.
