Cook the Quinoa: First, rinse the quinoa thoroughly under cold water. Then, cook it in a saucepan with 200 ml of water. Bring it to a boil, then reduce the heat and let it simmer for about 15 minutes until the quinoa is fully cooked and the water has evaporated. Set it aside to cool for a few minutes.
Blend the Ingredients: In a blender, combine the cooked quinoa, oat flour, 250 ml of water, olive oil, and salt. Blend until you have a smooth batter.
Cook the Crepes: Heat a non-stick pan over medium heat and lightly grease it with olive oil. Pour a small amount of the batter into the pan, swirling it around to create a thin layer. Cook for 2-3 minutes on one side until the edges begin to lift, then flip and cook for another 1-2 minutes on the other side.
Serve: Repeat the process with the remaining batter. Serve the crepes warm with your favorite toppings, such as fresh fruit, yogurt, or even a savory filling like sautéed vegetables or cheese.
