Classic Homemade Caramel Corn

Preheat oven to 120°C (250°F). Line a baking tray with parchment paper.

Place popcorn in a large mixing bowl.

In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup (or honey), and salt.

Bring to a gentle boil and simmer for 4–5 minutes without stirring.

Remove from heat and stir in baking soda and vanilla (mixture will foam).

Immediately pour caramel over the popcorn and stir to coat evenly.

Spread the coated popcorn on the prepared tray and bake for 45 minutes, stirring every 15 minutes.

Let cool completely before breaking into pieces.
