Introduction
Chocolate eclairs are a classic French dessert, famous for their airy, light choux pastry filled with creamy custard and topped with a glossy layer of chocolate. Ingredients:
For the Pastry:
1 cup water
1/2 cup unsalted butter
1 cup all-purpose flour
1/4 teaspoon salt
4 large eggs
For the Pastry Cream:
2 cups whole milk
1/2 cup granulated sugar
4 large egg yolks
2 tablespoons cornstarch
1 teaspoon vanilla extract
2 tablespoons unsalted butter
For the Chocolate Glaze:
4 ounces semisweet chocolate, chopped
1/2 cup heavy cream
How to Make:
Make the Choux Pastry:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a saucepan, bring 1 cup of water and 1/2 cup of butter to a boil, stirring occasionally.
Once the butter melts and the water boils, remove from heat and stir in 1 cup of flour and 1/4 teaspoon salt.
Stir until the dough pulls away from the pan and forms a smooth ball. Return the pan to medium heat and cook the dough for 1-2 minutes to dry it out slightly.
Let it cool for a few minutes. Then add the eggs one by one, mixing well after each addition. The dough will be smooth and glossy.
Transfer the dough to a piping bag fitted with a round tip. Pipe strips of dough about 3 inches long onto the prepared baking sheet.
Bake for 20-25 minutes until golden brown. Let the eclairs cool completely.
