Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, and set it aside.
Prepare the casserole sauce:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and grated garlic, and sauté for 3-4 minutes until softened and fragrant.
Brown the meat:
Add the minced meat to the skillet, season with 1 teaspoon of salt, 1/2 teaspoon of black pepper, dried oregano, and dried basil. Cook for 5-7 minutes until the meat is browned and cooked through.
Add the tomato ingredients:
Stir in the crushed tomatoes and tomato sauce. Let the mixture simmer for 5-10 minutes, allowing the flavors to meld together.
Combine pasta and sauce:
Add the cooked pasta to the skillet with the meat and tomato sauce mixture. Stir until well combined.
Assemble the casserole:
Preheat your oven to 375°F (190°C). Transfer the pasta and meat mixture to a baking dish. Sprinkle the mozzarella and Parmesan cheeses on top. Bake for 15-20 minutes, or until the cheese is melted and bubbly, and the top is golden.
Prepare the salad:
While the casserole is baking, prepare the salad. In a large bowl, combine the salad greens, cucumber slices, cherry tomatoes, and red onion. Drizzle with olive oil and balsamic vinegar, then toss. Season with salt and pepper to taste.
Serve:
Once the casserole is done, serve it hot with the fresh salad on the side.
