Prepare the Bacon: Cook the bacon slices in a pan over medium heat until crispy. Remove the bacon from the pan and crumble it into small pieces.
Make the Filling: In a mixing bowl, combine the crumbled bacon, diced jalapeños, softened cream cheese, shredded cheddar cheese, garlic powder, and salt. Mix until everything is well incorporated.
Assemble the Eggrolls: Lay out an eggroll wrapper on a flat surface. Place a generous spoonful of the filling in the center of the wrapper. Roll the wrapper tightly, folding in the sides as you go, to form a sealed eggroll. Repeat with the remaining wrappers and filling.
Fry the Eggrolls: Heat oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully place the eggrolls into the pan, cooking until golden brown and crispy, about 3-4 minutes on each side.
Drain and Serve: Remove the eggrolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce.
