In a large skillet or pot, heat olive oil over medium heat. Add onion and cook until soft, about 3–4 minutes. Stir in garlic and cook for another 30 seconds.
Cook Vegetables:
Add bell pepper and tomato to the pan. Sauté until they begin to soften, about 5 minutes. Season with paprika, chili flakes (if using), salt, and pepper.
Add Coconut Milk:
Pour in the coconut milk and stir well. Let it simmer gently for 5–7 minutes to allow flavors to meld.
Add Fish:
Gently add fish chunks into the simmering coconut broth. Cover and cook for 6–8 minutes, or until the fish is opaque and flakes easily with a fork.
Finish with Lime:
Stir in lime juice and adjust seasoning to taste.
Garnish and Serve:
Sprinkle with chopped cilantro or parsley. Serve hot with rice, quinoa, or crusty bread.
