Prepare the Vegetables: Start by peeling and chopping the zucchini into cubes. Dice the sweet green peppers, chop the onion and garlic, and dice the tomatoes.
Cook the Aromatics: In a large pan, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for 2-3 minutes until they soften and become fragrant.
Add the Vegetables: Add the diced zucchini and sweet green peppers to the pan. Stir and cook for another 5-7 minutes until the zucchini begins to soften.

Transfer to a Baking Dish: Preheat your oven to 180°C (350°F). Transfer the vegetable mixture into a baking dish, spreading it evenly.
Top with Cheese: Sprinkle the grated cheese over the top of the casserole.
Bake: Place the casserole in the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly, and the vegetables are cooked through.
Serve: Once the casserole is baked, remove it from the oven. Let it sit for a few minutes before serving. Enjoy your zucchini casserole hot, with a side of rice, bread, or a fresh salad.
