In a small bowl, combine the warm water and sugar. Sprinkle the fresh yeast over the top and stir gently. Let it sit for 5-10 minutes until it becomes frothy.
Prepare the Dough:
In a large mixing bowl, combine the wheat flour and salt. Add the yeast mixture, warm milk, olive oil, and softened butter. Mix everything together until it forms a soft dough.
Knead the Dough:
Transfer the dough to a floured surface and knead it for about 8-10 minutes, until it becomes smooth and elastic.
First Rise:
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it doubles in size.
Shape the Buns:
Once the dough has risen, punch it down to remove air bubbles. Divide the dough into small portions (about 12-15 pieces). Flatten each portion into a round disk and place about a tablespoon of grated cheese in the center of each. Fold the dough over the cheese and seal the edges tightly to form a bun.
Second Rise:
Place the shaped buns on a greased baking tray, leaving some space between each bun. Cover with a kitchen towel and let them rise for another 30 minutes, until puffed up.
Bake:
Preheat the oven to 180°C (350°F). Bake the buns for 20-25 minutes, or until golden brown on top.
Serve:
Allow the buns to cool slightly before serving. Enjoy the warm, gooey cheese filling and soft, fluffy texture!
