Slow Cooker Pot Roast – Tender, Flavorful, and Perfectly Seasoned

Season the beef roast generously with salt and pepper on all sides. Place it in the slow cooker.

Add the Aromatics:
Top the roast with the sliced onion, chopped garlic, rosemary, thyme, and pour the beef broth over it.

Slow Cook:
Cover the slow cooker and cook on low for 8-10 hours.

Make the Gravy:
Once the roast is done, remove it from the slow cooker and set it aside. Skim off 4 tablespoons of fat from the juices in the slow cooker and transfer it to a saucepan. Heat over medium heat.

Thicken the Gravy:
Sprinkle in the flour and cook for about 2 minutes until lightly golden. Add the remaining liquid from the slow cooker, Dijon mustard, Worcestershire sauce, and black pepper. Simmer until thickened, about 2 minutes. Season with salt to taste.

Serve:
Slice the beef and serve it topped with the rich gravy.
