Simple and Healthy Zucchini Fritters

Grate the zucchini, carrot, and potato. After grating, place the zucchini in a clean cloth or paper towel and squeeze out any excess moisture.

Mix the Ingredients:
In a large mixing bowl, combine the grated zucchini, carrot, and potato. Add the eggs, grated cheese, chopped parsley, chives, and minced garlic. Season with salt, pepper, and paprika to taste.

Add Dry Ingredients:
Stir in the oatmeal and flour to bind everything together into a thick batter. Adjust the consistency with extra flour if needed.

Form the Fritters:
Heat a non-stick skillet over medium heat and add a small amount of oil. Scoop a spoonful of the mixture and form it into small fritters. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.

Drain and Serve:
Place the cooked fritters on a paper towel to drain any excess oil. Serve immediately with a dollop of yogurt or your favorite dipping sauce.
