Wash and chop the figs into small pieces, removing the stems.
Cook the Jam:
In a large saucepan, combine the chopped figs, sugar, lemon juice, and water. Stir well.
Simmer:
Place the saucepan over medium heat and bring the mixture to a simmer. Stir occasionally and cook for 30–40 minutes, until the figs break down and the jam thickens to your desired consistency. If it gets too thick, add a little more water.
Blend (Optional):
For a smoother texture, you can use an immersion blender or regular blender to puree the jam. If you prefer it chunky, skip this step.
Jar the Jam:
Once the jam has thickened and cooled slightly, transfer it to sterilized jars. Seal and let cool completely.
Store:
Store the jam in the fridge for up to 3 weeks. It can also be canned for longer storage.
