Begin by peeling and dicing the potatoes into small cubes. Heat a little butter in a large frying pan over medium heat and add the diced potatoes. Cook for about 8-10 minutes until the potatoes are golden brown and tender, stirring occasionally.
In the same pan, add the ground pork and cook it until browned, breaking it apart with a spoon as it cooks.
Add the minced garlic and chopped onion to the pan and sauté for about 3 minutes, until fragrant and softened.
Stir in the smoked paprika, basil, and soy sauce. Mix well to combine all the flavors.
If using mushrooms, add the sliced mushrooms to the pan and cook for another 5 minutes until they soften.
Add the chopped tomato and cook for an additional 2-3 minutes until the tomato softens and releases its juices.
Sprinkle the grated cheese over the top of the mixture and cover the pan with a lid. Allow the cheese to melt completely, about 2-3 minutes.
Garnish with fresh dill and parsley before serving.
