In a bowl, combine the grated eggs, flaked fish, grated cheese, and mayonnaise. Season with salt, pepper, and herbs if using. Mix until creamy and well combined.
Layer the pita:
Lay one pita bread flat on a clean surface. Spread half of the mixture evenly over it. Place the second pita on top and spread the remaining mixture.
Roll tightly:
Carefully roll the layered pitas into a log, keeping it firm. Wrap the roll in plastic wrap and refrigerate for at least 1 hour to set.
Slice and serve:
