Roll out the puff pastry and cut into squares or rectangles.
Bake on a lined baking sheet for 12–15 minutes until golden and puffed. Let cool.
Prepare the Vanilla Pudding:
In a saucepan, gently heat the cream, sugar, and vanilla until warm.
In a separate bowl, whisk together the egg yolks and cornstarch.
Slowly pour in the warm cream mixture while whisking continuously.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens into a smooth pudding.
Assemble:
Let the pudding cool slightly.
Slice the puff pastry squares in half (like a sandwich) and fill with pudding, or spoon the pudding directly on top.
Dust with powdered sugar before serving.
