Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic; sauté until fragrant.
Add ground beef and cook until browned, breaking it apart with a spatula.
Add chopped bell pepper, zucchini, and cherry tomatoes. Cook for 5–7 minutes until vegetables are soft.
Season with oregano, cumin, paprika, salt, and black pepper. Stir to combine.
Add sliced olives and cook for 2 more minutes.
Remove from heat, sprinkle with crumbled feta cheese, and top with fresh parsley.
Serve warm on its own, or with rice, quinoa, or pita.
