Mary Berry's Lemon Kissed Chicken – A Zesty Delight!

Set your oven to 200°C (400°F) to preheat.

Prepare the Chicken:
Pat the chicken breasts dry with paper towels. Place them in a 23x33 cm (9x13 inch) baking dish.

Season the Chicken:
In a small bowl, whisk together olive oil, oregano, thyme, garlic powder, 1 teaspoon salt, and black pepper. Coat the chicken breasts evenly with this mixture.

Make the Lemon Sauce:
In the same bowl, combine the vegetable broth, minced garlic, lemon zest, lemon juice, the remaining teaspoon of salt, and brown sugar. Pour this mixture over the chicken.

Add Lemon Wedges (Optional):
You can place lemon wedges between the chicken breasts for extra citrus flavor.

Bake the Chicken:
Bake for 15 minutes, then baste with the juices in the pan. Continue baking for another 15 minutes or until the chicken reaches an internal temperature of 75°C (165°F).

Serve and Enjoy:
Serve immediately, garnished with fresh lemon wedges if desired.
