Lemon Semolina Cream

In a medium saucepan, heat the milk until warm (if not already).

Gradually whisk in the semolina while stirring constantly to avoid lumps.

Add the sugar and continue stirring over medium heat until the mixture thickens (about 5–7 minutes).

Remove from heat and stir in the lemon zest, lemon juice, and vanilla extract (if using).

Add the soft butter and stir until fully melted and incorporated.

Pour the cream into serving glasses or a dish. Let cool to room temperature, then chill in the fridge if desired.

Serve as is, or top with fruit, grated chocolate, or mint leaves.
