Sauté the aromatics:
Heat oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté for 1–2 minutes until fragrant.
Cook the beef:
Add ground beef to the pan. Break it up with a spatula and cook until browned, about 5–6 minutes. Season with salt, pepper, and paprika/chili if using.
Assemble the tortillas:
Warm the tortillas in a dry skillet or microwave. Spoon the beef mixture onto each tortilla and top with your favorite toppings.
Serve:
Fold or roll the tortillas and enjoy immediately while warm!
