In a bowl, combine warm water and yeast. Stir in a teaspoon of sugar and let it sit for 5-10 minutes until the yeast becomes frothy.

2. Make the Dough:
In a large mixing bowl, combine the remaining sugar, warm milk, melted butter, salt, and vanilla essence.

Add the frothy yeast mixture to this and stir well.

Gradually add the flour, a little at a time, mixing until a smooth dough forms. You may need to knead it for about 5 minutes until it’s elastic and slightly sticky.

3. Let the Dough Rise:
Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour, or until it doubles in size.

4. Shape the Doughnuts:
Punch down the dough to release the air. Roll it out on a floured surface to about 1/2-inch thickness.

Use a doughnut cutter or two round cookie cutters (one large and one small) to cut the dough into doughnut shapes.

5. Fry the Doughnuts:
Heat oil in a deep pan or fryer to 350°F (175°C). Fry the doughnuts in batches for 2-3 minutes on each side or until golden brown.

Remove the doughnuts from the oil and place them on paper towels to drain excess oil.

6. Serve:
Optionally, dust the doughnuts with powdered sugar, cinnamon sugar, or glaze them with a simple icing.

Serve warm and enjoy!
