Pour the whole milk into a saucepan and heat it over medium heat until it just starts to simmer (not boil).

Stir in the lemon juice or vinegar and salt. You’ll see the milk begin to curdle.

Once the curds have formed, remove the pan from the heat and let it sit for about 1-2 minutes.

Pour the curds through a fine strainer or cheesecloth into a bowl to separate the whey from the curds.

If you want extra creaminess, stir in the butter while the curds are still warm.

Optionally, add herbs or spices for extra flavor and mix well.

Serve immediately or store in an airtight container in the fridge for up to 3 days.
