Golden Mediterranean Grilled Cheese with Sun-Dried Tomato & Feta

Butter one side of each bread slice.

On the unbuttered side of two slices, layer mozzarella, feta, sun-dried tomatoes, spinach, and herbs (if using).

Top with the other bread slices, buttered side out.

Heat a non-stick skillet over medium heat. Grill sandwiches for 3–4 minutes per side, pressing slightly, until golden brown and the cheese is melted.

Slice and serve warm.
