Sauté Aromatics:
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add garlic, ginger, and green onions. Stir-fry for 1 minute until fragrant.
Cook Bok Choy:
Add the chopped bok choy and stir-fry for 3–4 minutes, until it wilts slightly but remains crisp.
Add Sauce:
Stir in soy sauce, rice vinegar, and brown sugar (if using). Toss to coat the bok choy evenly and cook for an additional 2 minutes until heated through.
Finish:
Drizzle with sesame oil and sprinkle with crushed red pepper flakes and toasted sesame seeds. Serve hot as a side or over rice!
