Easy Egg Muffins – A Healthy Breakfast Recipe for Kids

Preheat the Oven: Set the oven to 375°F (190°C) and grease a muffin tin with non-stick spray or line it with muffin cups.

Prepare the Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, and salt.

Mix the Wet Ingredients: In another bowl, whisk the eggs, milk, olive oil (or melted butter), and herbs (if using).

Combine the Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined.

Add the Fillings: Gently fold in the grated cheese and chopped vegetables.

Fill the Muffin Tin: Spoon the mixture evenly into the muffin cups, filling each about 2/3 full.

Bake: Place the tin in the oven and bake for about 18-20 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve: Let the muffins cool for a few minutes before removing them from the tin. Serve warm.
