In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
Mix Wet Ingredients:
In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix until fully combined.
Combine Wet and Dry:
Gradually add the wet ingredients to the dry ingredients, stirring until the dough begins to come together. You should have a soft dough that is slightly sticky. If the dough is too wet, add a little more flour.
Roll the Dough:
Turn the dough out onto a floured surface. Roll it out to about 1/2 inch thick. Use a doughnut cutter or two round cutters (one large and one small) to cut out doughnut shapes.
Heat the Oil:
Heat about 2 inches of vegetable oil in a deep fryer or large pot over medium heat (around 350°F or 175°C).
Fry the Doughnuts:
Carefully drop the doughnuts into the hot oil. Fry for 1-2 minutes on each side or until golden brown. Remove from the oil and place on paper towels to drain excess oil.
Coat with Sugar:
While the doughnuts are still warm, you can coat them with powdered sugar or cinnamon sugar for added flavor.

Serve your fresh doughnuts immediately while they are warm and soft!
