Prepare the chicken: Season the chicken shank with salt, black pepper, and curry powder.
Cook the onion and garlic: In a large skillet, heat some oil over medium heat. Add the chopped onion and garlic and sauté until they become soft and aromatic.
Add the chicken: Add the seasoned chicken shanks to the skillet and cook for about 5 minutes, turning them to brown on all sides.
Add tomatoes: Once the chicken is browned, add the chopped tomato and grated tomatoes to the pan. Stir well and let it cook for another 3-5 minutes to allow the tomatoes to soften.
Add the broth: Pour the broth into the skillet, making sure the chicken is mostly covered. Reduce the heat to low, cover, and simmer for 30-40 minutes, or until the chicken is tender and cooked through.
Serve: Once the chicken is cooked, remove from heat. Serve the chicken with a generous portion of the flavorful sauce on top.
