Heat some vegetable oil or butter in a large skillet over medium heat. Add the diced potatoes and cook until they are golden brown and cooked through, about 8-10 minutes.
Add the chopped onion to the skillet and cook for an additional 2-3 minutes, until softened.
Stir in the sliced sausages and chopped bacon. Cook for another 5 minutes, until the bacon is crispy and everything is well combined. Remove from heat and set aside to cool.
Assemble the Puff Pastry:
Preheat your oven to 375°F (190°C).
Roll out the thawed puff pastry on a lightly floured surface to your desired thickness. If needed, cut the pastry into squares or rectangles, depending on how you plan to fold or roll them.
Spoon the filling mixture onto the center of each pastry square or rectangle. Be sure not to overfill.
Add Cheese:
Sprinkle shredded cheddar cheese on top of the filling.
Seal the Pastry:
Fold the edges of the pastry over the filling, pinching the seams to seal. If you're using squares, you can fold them into triangles or fold the edges to form a pouch shape.
Bake:
Place the filled and sealed pastries onto a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crispy.
Serve:
Once baked, remove from the oven and let cool for a few minutes before serving.
