Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Potatoes:
Wash and halve the potatoes. Pat them dry with a towel for extra crispiness.
Season:
In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until evenly coated.
Bake:
Spread the potatoes cut-side down on the baking sheet.
Bake for 35–40 minutes, flipping halfway through, until golden brown and crisp.
