Prepare the potato purée:
Peel and boil the potatoes in salted water until tender. Drain, mash with butter, and gradually add milk until smooth. Season with salt to taste.
Make the spinach & mushroom mix:
In a pan, heat olive oil and sauté onion until soft. Add garlic, mushrooms, and cook until tender and lightly golden. Add spinach and cook until wilted. Season with salt, pepper, and nutmeg.
Assemble the casserole:
Preheat oven to 180°C (350°F). Spread the mashed potatoes in a baking dish. Top evenly with the spinach and mushroom mixture. Sprinkle cheese on top if using.
Bake:
Bake for 20–25 minutes, or until the top is golden and heated through.
