Cosmic Carrot Spiral with Nebula Cream Fusion

Heat your oven to 375°F (190°C). Grease a 10x15-inch jelly roll pan and line it with parchment paper. Spray lightly with baking spray.

Mix the Dry Matter:

In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

Create the Wet Cosmos:

In a large bowl, beat the eggs and sugar until pale and fluffy (like a new starburst). Fold in the pumpkin purée and grated carrots.

Form the Cosmic Batter:

Gently stir the dry ingredients into the wet mixture until just combined. Do not overmix. If using, sprinkle in the walnuts.

Bake the Cosmic Plane:

Pour batter evenly into the prepared pan. Bake for 13–15 minutes, or until the cake springs back when touched.

Stardust & Roll:

While the cake bakes, prepare a clean kitchen towel and dust it generously with confectioners' sugar. Once baked, immediately invert the cake onto the towel and peel off the parchment paper. Roll it up from the short side, using the towel. Let cool completely on a wire rack.

Nebula Cream Fusion:

Beat the cream cheese, butter, confectioners' sugar, and vanilla until light and smooth.

Assemble the Spiral:

Once cooled, carefully unroll the cake. Spread the Nebula Cream evenly across the surface. Re-roll the cake (without the towel), then wrap tightly in plastic wrap.

Cryogenic Set:

Chill the spiral in the refrigerator for at least 1 hour.

Finish & Serve:

Unwrap, dust with more stardust, and slice into glorious cosmic rings. Serve and savor!
