Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
In a bowl, mix almond flour, shredded coconut, baking powder, and salt.
Add honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until a dough forms.
Scoop small portions of the dough and roll them into balls. Place them on the baking sheet and flatten slightly.
Bake for 10-12 minutes or until golden brown.
