Coca-Cola Chicken with Cheesy Stuffed Mushrooms and Spicy Pepper

Prepare the Coca-Cola Chicken:

Season the chicken breasts with salt, pepper, and a drizzle of olive oil.

In a large skillet, sauté the chopped onion and garlic until softened, about 3-4 minutes.

Add the chicken breasts to the skillet and sear both sides until golden.

Pour in the Coca-Cola and let it simmer for about 20-25 minutes, turning the chicken occasionally until the sauce thickens and the chicken is cooked through.

Prepare the Cheesy Stuffed Mushrooms:

Preheat the oven to 180°C (350°F).

In a bowl, mix the cream cheese, shredded mozzarella, parsley, salt, and pepper.

Stuff the mushroom caps with the cheese mixture and place them on a baking tray.

Bake the mushrooms for about 15-20 minutes or until the cheese is melted and bubbly.

Prepare the Spicy Pepper:

In a small skillet, heat the olive oil over medium heat.

Add the chopped chili and sauté for about 1-2 minutes until fragrant.

Serve:

Plate the Coca-Cola chicken with the cheesy stuffed mushrooms on the side.

Drizzle the spicy pepper oil over the chicken and mushrooms for an extra kick.
