Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
In a mixing bowl, whisk together the eggs, sugar, vanilla extract, nutmeg, cinnamon (if using), and salt until well combined.
Heat the milk in a saucepan over medium heat until warm but not boiling.
Slowly pour the warm milk into the egg mixture while whisking constantly to avoid curdling the eggs.
Pour the custard mixture into the prepared baking dish.
Place the baking dish in a larger pan and add hot water to the outer pan to create a water bath. This will help cook the custard evenly.
Bake for 45–50 minutes, or until the custard is set and a knife inserted in the center comes out clean.
Let the custard cool before serving. It can be served warm or chilled.
