Preheat the Oven: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or lightly grease them.
Cream the Butter and Sugars: In a large mixing bowl, cream together the butter, powdered sugar, and granulated sugar using an electric mixer until light and fluffy.
Add Wet Ingredients: Add the beaten eggs and vanilla extract to the mixture and beat until smooth and combined.
Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them onto the prepared baking sheets, leaving space between each cookie.
Flatten and Decorate: Use a glass or your hands to gently flatten the dough balls. If desired, sprinkle with colored sugar or decorate with icing after baking.
Bake: Bake in the preheated oven for 8-10 minutes, or until the edges of the cookies are lightly golden. Be careful not to overbake them.
Cool: Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
