Chewy Coconut Bliss Bars

Preheat your oven to 175°C (350°F) and line an 8x8-inch (20x20 cm) baking pan with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large mixing bowl, cream the softened butter with the brown sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.

Fold in the shredded coconut evenly.

Spread the batter evenly into the prepared baking pan and smooth the top with a spatula.

Bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Let cool completely in the pan before slicing into bars.
