Cheddar Potato Cakes – Crispy, Cheesy, and Perfect for Any Occasion

In a large bowl, combine the mashed potatoes, egg, flour, shredded cheddar cheese, chopped chives (or green onions), salt, and black pepper. Mix well until everything is evenly combined.

If the mixture is too soft to shape into cakes, add a little more flour until it holds together well.

Use your hands to form the potato mixture into small cakes, about 2 inches in diameter.

(Optional) If you want extra crispiness, dip each cake into breadcrumbs to coat lightly.

Heat a tablespoon of olive oil in a large frying pan over medium heat. Once the oil is hot, carefully add the potato cakes to the pan, cooking in batches if necessary.

Fry the cakes for about 3-4 minutes on each side, or until golden brown and crispy.

Remove the cakes from the pan and place them on a paper towel-lined plate to drain excess oil.

Serve the Cheddar Potato Cakes warm, either on their own or with a dipping sauce.
