Heat olive oil in a skillet over medium-high heat.
Sauté onion for 3–4 minutes until softened.
Add garlic and cook for another 1–2 minutes.
Add ground beef and cook until browned, breaking it up with a spoon.
Stir in cumin, paprika, chili powder, salt, and pepper. Cook for 2–3 more minutes.
Remove from heat and let cool slightly. Stir in shredded cheese.
2. Assemble the Empanadas:
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Unroll pie crusts and cut out 4-inch circles.
Place a spoonful of filling in the center of each.
Fold in half and seal edges with a fork.
3. Bake:
Arrange empanadas on the baking sheet and brush with beaten egg.
Bake for 20–25 minutes until golden brown and crispy.
4. Serve:
Let cool slightly and serve warm with your favorite dipping sauce.
