Baked Fried Chicken

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the chicken: Cut the chicken breasts into thirds, ensuring they are evenly sized for uniform cooking.

Make the flour mixture: In a shallow bowl, combine flour, paprika, garlic powder, onion powder, oregano, thyme, salt, and pepper. Mix well.

Prepare the egg wash: In a separate bowl, whisk together the eggs and buttermilk until smooth.

Prepare the breadcrumb coating: In another shallow bowl, mix the breadcrumbs and Parmesan cheese.

Coat the chicken: Dredge each chicken piece in the flour mixture, dip in the egg wash, and coat with the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick.

Bake the chicken: Arrange the coated chicken on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with oil. Bake for 20-25 minutes or until golden brown and cooked through (internal temperature of 165°F or 75°C).

Serve: Remove from the oven, let the chicken rest for a few minutes before serving.
