In a mixing bowl, beat the eggs and sugar together until light and fluffy.
Gradually add the flour and mix until smooth.
Preheat a non-stick frying pan over low heat. Lightly grease with oil or butter if necessary.
Pour the batter into the pan and spread evenly.
Cover the pan with a lid and cook on low heat for about 10–12 minutes, or until the top is set and a toothpick inserted comes out clean.
Carefully flip and cook for another 2–3 minutes on the other side.
Let cool slightly before serving. Enjoy as is or dust with powdered sugar.
