Toast the Orzo: In a large pan, heat 1 tbsp olive oil. Add orzo and toast over medium heat, stirring, until golden brown. Remove and set aside.
Cook the Chicken: In the same pan, heat the remaining oil. Season chicken strips with salt, pepper, paprika, and oregano. Sauté until golden and cooked through. Remove from pan.
Sauté Aromatics: Add onion and garlic to the pan and cook until soft.
Combine & Simmer: Return orzo to the pan, stir in broth and water. Bring to a simmer and cook uncovered for 8–10 minutes, stirring occasionally.
Finish the Dish: Add the cooked chicken back into the pan. Simmer until liquid is absorbed and orzo is tender.
Serve: Garnish with fresh parsley and Parmesan. Serve warm.
