In a small saucepan, combine the chopped peaches, honey (or sugar), and 1 cup of water.
Bring the mixture to a simmer and cook for 5–7 minutes until the peaches are very soft.
Remove from heat and allow to cool slightly.
Blend the mixture until smooth.
For a smoother lemonade, strain the purée through a fine mesh sieve into a pitcher.
Add the lemon juice and remaining 3 cups of cold water to the pitcher. Stir well.
Refrigerate until chilled.
Serve over ice and garnish with lemon slices, peach slices, and mint leaves if desired.
