Savory Stuffed Potato Frittata – A Crispy, Cheesy Delight

Peel and slice the potatoes thinly. Heat olive oil in a pan and fry the potatoes until golden and crispy. Set them aside on paper towels to drain excess oil.

Cook the Beef:

In the same pan, add a little more olive oil and sauté the onions and grated carrot until softened.

Add the ground beef and cook, breaking it apart as it browns. Season with salt, black pepper, paprika, and Italian herbs. Cook until the beef is fully browned and cooked through. Set aside.

Prepare the Egg Mixture:

In a mixing bowl, crack the eggs and beat them well. Add a pinch of salt, pepper, and paprika. Stir in the flour and grated cheese, then mix until smooth.

Assemble the Frittata:

Preheat the oven to 180°C (350°F).

In a large oven-safe skillet, layer the cooked potatoes on the bottom, then spread the cooked ground beef mixture on top of the potatoes. Pour the egg mixture over the top, ensuring it covers the ingredients evenly.

Cook the Frittata:

Place the skillet in the preheated oven and bake for 25-30 minutes, or until the eggs are set and the top is golden brown and slightly crispy.

Garnish and Serve:

Once out of the oven, let the frittata cool for a few minutes before cutting into slices. Garnish with chopped green onions.
