For the Sweet Potato:

1 medium sweet potato, halved

½ tsp salt

½ tsp black pepper

1 tsp butter or olive oil (optional)

For the Fresh Salad:

½ cucumber, sliced

½ tomato, diced

¼ red onion, finely chopped

¼ cup shredded carrots
